Preventative or Curative - How Divergan® works.
Divergan products can be added to the wine, either directly in powder form or as a suspension. In the latter case, a 10% suspension of Divergan F is dissolved in a corresponding amount of untreated wine or in water. After 30 minutes of gentle mixing, the PVPP suspension is poured into the storage tank and mixed thoroughly with the untreated wine.
Normal Dosage
For preventative use in white must or white wine, use a Divergan concentration of 10–30 g/hl. The required amount of Divergan is established, e.g., by browning tests. For treatment against bitterness, use Divergan F in proportions of 15–25 g/hl. The typical dosage for wine damaged by oxidization is 30–50 g/hl.
In extreme cases, a higher concentration may be necessary. For the most effective treatment, must should be clarified and wine finely filtered. Contact times of 20–60 minutes are sufficient when adequately mixed, even though longer contact times are permissible without any negative effects on the wine. With shorter contact times, as may be applicable for Divergan F, the polymer should be added as a homogenous suspension. To save time, the wine can be filtered before the sedimentation of the PVPP is complete. The contact time, however, can also be extended until the refiner, such as Divergan F, has settled completely.
